Marshmallow is sugar, water and air stabilised by a setting agent. In the vast majority of products that agent is gelatin.
The short version
- Certified halal beef gelatin — permissible
- Fish gelatin — widely accepted
- Unspecified gelatin — verify before buying
Pectin and aquafaba marshmallows are now sold widely and sidestep the question entirely.
